Question about robe

Hello!

 

I have now maybe find a seamstress to do my robe, but she had some questions about the robe.

I hope someone in here maybe can help my with this :)

 

For the pleats below the shoulder, do those need to be stitched down, ironed, or are soft folds that tuck into the obi at different intervals okay? Or do they need to be more managed/sewn into place shoulder to waist? Are they specifically looking for a particular number of pleats?
